Domenico Serra, chef and owner of Cucina Mia, originally from a small city near Naples, has been around the kitchen since he was a child. He grew up in his family’s restaurant in Italy and the restaurant was his playground. He felt straightaway he belonged to that place, his first love was pizza and after many years in the F&B industry in Italy, Domenico settled in Dubai where he opened his first restaurant. His cuisine is quite different because he says ‘We do not compromise. When we launch new dishes on the menu, we follow the recipe and tradition’.For Domenico Serra the flavour but also the scent must be exact, when he does not succeed - because of the ingredients or logistical problems from Italy - he moves on and looks for another recipe. Each dish must be simple and flavours are not compromised or altered.
